Pumpkin Banana Oat Muffins
"Recipe as follows:

Ingredients:
1 cup all purpose flour
1 cup oat flour
1 tsp baking soda
1 tsp baking powder
1 tsp salt
1 tsp cinnamon
1 tsp ginger powder
½ tsp clove powder
1 tsp nutmeg powder
1/2 cup brown sugar
1/4 cup white sugar
1 cup pumpkin puree
3/4 cup ripe bananas
1/2 cup vanilla Greek yogurt
2 eggs
1 stick softened butter
1 tsp vanilla extract
½ cup chopped toasted pecans
½ cup chocolate chips

Topping

1 cup vanilla coconut granola
¾ cup chocolate chips
½ cup toasted pecans

Method:

Preheat over to 350 Degrees F. Prepare your muffin pan by spraying with non-stick cooking spray.

Combine the flours, baking soda, baking powder, salt, cinnamon, clove, nutmeg, ginger powders.

In a small bowl, combine the vanilla coconut granola, chocolate chips, pecans and keep aside.

In a kitchenaid mixer, start with the softened butter. Add in the sugar and mix well. Add in the eggs one at a time and incorporate well. Add in the yogurt and vanilla extract and mix again for a couple minutes on medium speed. Add in the pumpkin purée and mashed bananas and blend till incorporated. Add in the chocolate chips and pecans and mix until incorporated.

Combine dry ingredients and mix until just combined. Do not overmix. Scoop batter into prepared muffin pan with an ice cream scooper.

Add about 2 tbsp of the topping on each muffin cup.

Bake for approx 25-30 minutes, until tops are crispy and the knife inserted in center comes out clean.

Topped with a vanilla coconut granola, toasted pecans and chocolate chip mixture! I am always in a dilemma like all the other parents, as to what to give the kids for breakfast, and these turned out to be perfect!
