This hummus gets it's beautiful red/pink hue from cooked beets! Hummus is great in salads, sandwiches and on crudite boards. Shmear this hummus on toast and top with crunchy cucumbers, feta and fresh herbs!

ingredients

  • 2 medium beets, cooked
  • 1 clove garlic
  • 1 tablespoon olive oil
  • 1/2 lemon, juiced
  • 1 tablespoon tahini
  • 1/3 cup canned chickpeas
  • 1/4 teaspoon cumin
  • salt, to taste
  • black pepper, to taste, if needed

Method

  • Step 1

    Add all ingredients into a blender and process until smooth and creamy. If it's too thick adjust the consistency with a little bit of water or olive oil.

  • Step 2

    Once prepared, serve with toast, cucumbers, feta and any fresh herbs you have on hand! Enjoy
