Ingredients

12 oz cooked salmon

4 eggs

1 cup roasted cauliflower

1/2 lb haricot verts, blanched

4 radishes, sliced

2 avocados, sliced

1/2 cup grape tomatoes, halved

olives

4 oz cooked and crumbled bacon

5 oz mixed baby greens

dressing:

1 garlic clove, minced

2 tbsp chopped parsley

1 tsp dijon mustard

juice of one lemon

2 tbsp red wine vinegar

1/4 cup olive oil

salt and pepper, to taste

Directions

Soft boil your eggs by bringing 3 quarts of water to a boil in a large pot. Gently lower the eggs in and cook for exactly 5 minutes. Run under cold water to stop the cooking, then peel and slice.

Divide the greens among 4 bowls and top with salmon, eggs, cauliflower, haricot vert, radishes,avocado, tomatoes and olives.

Add all of the dressing ingredients to a mason jar with a tight fitting lid and shake until emulsified.
