Natasha from TheFeistyKitchen created this cheese board using BelGioioso Fresh Mozzarella. The creamy fresh mozzarella, juicy summer tomatoes, and vibrant, basil-forward chimichurri sauce is perfect to enjoy with a group of friends over a glass of rosé!

Cheese Board
ingredients
- 2 packs BelGioioso Sliced Fresh Mozzarella
- Heirloom tomatoes, quartered or sliced
- Cucumbers, sliced
- GF crackers or sliced crusty sourdough bread
Italian Chimichurri
ingredients
- 1 cup fresh Italian parsley, rough chopped
- 2 cups fresh basil, rough chopped
- 3 cloves garlic, rough chopped
- 1 cup extra virgin olive oil
- 1/8 cup red wine vinegar
- 1/8 cup fresh lemon juice
- 2 tablespoon Dijon mustard
- 1/4 cup capers, plus 1 tbsp caper juice/brine
- 1 teaspoon red pepper flakes
- Sea salt and pepper, to taste
Method
Step 1
In a food processor, add all ingredients except olive oil. Pulse a few times to combine ingredients, then turn processor on and pour olive oil through the chute while running until just combined.
Step 2
Assemble your cheese board with the fresh mozzarella, tomatoes, cucumbers, crackers/bread, and chimichurri sauce. Drizzle mozzarella with chimichurri and ENJOY outside with friends and a glass of rosé!
