Our go-to homemade guacamole recipe!
5 avocados, cut in half, pits removed (but save a few)
1/2 small sweet onion, finely diced
4 on the vine tomatoes, seeds removed and diced
1 jalapeño, finely diced (keep seeds in if you like spice, remove if you want less heat)
salt and freshly ground black pepper
chopped cilantro (optional), for garnish
Add the avocados to a mixing bowl and mash with a potato masher or fork until smooth. Mix in the onions, tomatoes, and jalapeño and season generously with salt and pepper. Add the juice of three limes and taste; adding more lime based on your preference.
If making ahead, add a few pits to the guacaole and cover tightly with plastic wrap and store in the fridge. When ready to serve, remove and discard pits. Garnish with chopped cilantro (if desired) and serve.
Note: if using a molcajete, grind the onion and jalapeno first, then add tomato and grind a bite more. Finally add avocados and mash until smooth. Season with lime juice, salt and pepper.
