Weeknight dinners have started to look a little different during these past few months at home. Although we are not going anywhere, we are busier than ever, and sometimes pulling together a cohesive meal after a long day of working and homeschooling can be TOUGH. I take a lot of comfort in having my pantry stocked with Simply Organic spices. No matter what we have on hand in the pantry and refrigerator, we know we can pull something tasty together thanks to the real spice and real bite from Simply Organic staples. These Meatballs are spiced with Simply Organic Turmeric for a hit of punchy earthiness and Simply Organic Ginger for a lovely sweet heat. We added Simply Organic Parsley to bring fresh herbaceousness and cayenne for a bit of heat. The sauce is made from a base of fresh red peppers, onions, garlic, and jalapeño and gets a generous amount of Simply Organic Smoked Paprika for a pleasant smoky flavor.
The best part about this recipe is you can tweak it based on what you have on hand. The meatballs will work with any ground meat you have, and you can serve it over whatever side you fancy! If you don’t have brown sugar for the sauce, use honey or granulated sugar. As for the citrus, any will do! Lastly, jarred roasted peppers would work well in place of the fresh pepper in the sauce. The options are endless.

For the Meatballs:
ingredients
- 1 pound ground beef
- 1/2 small onion, minced
- 1 egg, beaten
- 2 teaspoons Simply Organic Turmeric
- 1 teaspoon Simply Organic Ginger
- 1 teaspoon Simply Organic Parsley
- 1 teaspoon kosher salt
- 1/4 teaspoon Simply Organic Cayenne
- Olive oil spray, as needed
For the Red Pepper Sauce:
ingredients
- 2 tablespoons olive oil
- 1/2 small onion, minced
- 1 red pepper, diced
- 1 jalapeño pepper, minced
- 2 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 1/2 cup chicken stock
- 1 tablespoon brown sugar
- 1 tablespoon Simply Organic Smoked Paprika
- 1 lime, juiced and zested
- Simply Organic Black Peppercorns, freshly ground, as needed
- kosher salt, to taste
For the Yogurt Sauce:

- 1 cup plain yogurt
- 1 clove garlic, minced
- 1 lime, juiced
- Kosher salt, as needed
- Simply Organic Black Peppercorns, freshly ground, as needed
To Serve:

- Steamed rice
Method
Step 1
Preheat the oven to 425˚F and line a sheet pan with tin foil then place a baking rack on top, then spray the tray with olive oil spray.
Step 2
To make the meatballs, add ground beef, onion, egg, spices and salt to a large bowl. Using a fork, mix the mixture until well combined. Roll the meat mixture into tablespoons sized meatballs and place on the prepared baking sheet. Place in the oven and cook for 30 minutes, or until golden brown and cooked through.
Step 3
Meanwhile, in a large skillet, heat olive oil over medium heat. Add the onion and red pepper and cook until softened, about 7 minutes. Add the jalapeño and garlic and cook for one minute more. Add the crushed tomatoes, chicken stock, brown sugar and smoked paprika and bring to a boil. Reduce heat to a simmer, season with salt and pepper and cook for 30 minutes. Add the lime zest and juice and season to taste.
Step 4
Place the cooked meatballs in the sauce and let simmer for about 10 minutes.
Step 5
When ready to serve combine the yogurt, garlic and lime and season to taste with salt and pepper. Serve meatballs and sauce over rice, dolloped with yogurt sauce.
