ingredients

For the Crepe Batter

  • 2 large eggs
  • 2 1/4 cups whole milk
  • 1 3/4 cup all purpose flour, sifted
  • 1 teaspoon kosher salt
  • 1 stick unsalted butter, melted
  • Zest of one large orange

  • 2 tablespoons Nutella, per crepe
  • 1/2 banana, sliced, per crepe

  • Confectioner's sugar
  • Finely chopped Hazelnuts

Method

  • Step 1

    Crack eggs into a blender. Add milk and blend to combine. Add sifted flour and salt and combine.

  • Step 2

    With the blender running, pour the butter into the batter until just combined. Add the zest and blend one more time to create a smooth, consistent batter.

  • Step 3

    Place batter in the fridge and allow it to rest for one hour.

  • Step 4

    Pour ¼ cup batter onto a non-stick crepe pan on medium heat and swirl to coat. Cook crepe for 30 sec to 1 minute and then flip and cook for an additional 30 seconds.

  • Step 5

    Remove from the pan and spread the Nutella on the warm crepe, careful not to tear. Add banana and fold the crepe. Repeat with remaining batter.

  • Step 6

    Sprinkle finely chopped hazelnuts over each crepe right before serving.
