If I Had a Boyfriend, This is What I'd Make Him for Valentine's Day
Single people LOVE to hate on Valentine's Day, but I am here to admit that I quite happen to love it (and not just because February 15th is my birthday). Even though I may not have a significant other (*sobs silently*), I have plenty of people in my life that I love dearly, and cooking is my favorite way to show someone just how much I love 'em. Even though I'll be cooking for my mom, dad, and some friends this year, that doesn't mean that I haven't thought long and hard about what I'd make for the boyfriend that I do not have. It's called planning ahead and being optimistic, have you heard of it?

Any boyfriend of mine will of course be an adamant shellfish lover, so what better way to kick off our evening of romance than with a dozen ‘sters and pink caviar? I am the bougie girlfriend of his dreams! I am not going to make a joke about oysters being an aphrodisiac because we don’t need any additional hormones to ignite our fiery relationship!

Not only will my said boyfriend have an immense appreciation for shellfish, but he’ll also love a damn good salad. The lemon-soaked golden raisins in this salad signify the bright, sunny union that is the rest of our glorious lives together and the shredded radicchio is symbolic of the bitter lives we lived before we met each other!

What’s more romantic than a crispy scallop doused in a blush pink sauce? Nothing, that’s what. For this dish, I’d pop open a crisp bottle of rosé for these mollusks and then my sweet boyfriend and I would drink the rest together, like the happy, thriving couple that we are.

The only way to round out a perfect meal celebrating our undying love for each other is a warm batch of chocolate chunk cookies! The flecks of Maldon salt balance out the sweet, buttery flavors in this cookie in the same way that my personality balances out his! Soulmates!!
