How to Break Down a Melon

There are few things that bring me more joy than cutting into a perfect watermelon in the peak of summer. I eat it plain, blend it into juice, shake it up into a cocktail but my favorite way to enjoy it is in a simple summer salad. All you need is some cubed watermelon, fresh lime, a few crunchy cucumbers, mint and some chili lime seasoning and you have a refreshing, crowd-pleasing summer side. If it's a seeded melon like honeydew or cantaloupe, once you remove the rind, cut it in half and scoop and discard the seeds.
