There are few things that bring me more joy than cutting into a perfect watermelon in the peak of summer. I eat it plain, blend it into juice, shake it up into a cocktail but my favorite way to enjoy it is in a simple summer salad. All you need is some cubed watermelon, fresh lime, a few crunchy cucumbers, mint and some chili lime seasoning and you have a refreshing, crowd-pleasing summer side. - 4 cups cubed seedless watermelon
- 2 Persian cucumbers, thinly sliced
- 1 lime, juiced
- 1/ 4 cup fresh mint leaves
- chili lime seasoning, to taste
Add cubed watermelon to a platter. Scatter cucumber on top, then squeeze fresh lime juice on top.
Garnish with mint and season with chili lime seasoning and serve.
