Matcha Cashew Cheesecake
Merging my love of the matcha tea with that of vegan cheesecakes, I set out to make this vanilla matcha zebra cheesecake using @carringtonfams matcha tea powder. I couldn’t be happier with the result. The dessert turned out creamy but light, absolutely delicious and flavorful, and very pretty.
Caramel Granola
I have been having a lot of fun with vegan caramel variations lately and it only made sense to apply that to granola. The result was predictably amazing! I love this straight up as a snack, or in parfaits, or as cereal with almond milk.
Tofu Steak Asian Salad With Udon Noodles
Asian chopped salad kit by @earthboundfarm in collaboration with @TheFeedFeed. Served with udon noodles and maple glazed tofu steaks, this salad makes me love what I do even more. I was quite excited about the salad kit because alongside the organic greens, it comes with a really tasty tahini dressing, sunflower seeds and crunchy toppings. So far from bland, I can see how this will make life easier for those who are on a time crunch but still want to keep things healthy and wholesome.
