"First official day of not having to go I to work 😂 means eggs for breakfast. Oh goodness how I’ve missed you! As a vegetarian, I actually use eggs a lot as an affordable source of protein. Which, is so funny, because I used to HATE the taste of eggs, particularly the yolk. I went for 15 years without eating eggs, but it took college (and many hungover mornings) to learn to relove eggs. I’m so happy that I have them back, especially with this dish 😍. Toasted tortillas tossed in chipotle salsa and some leftover tomato pasta, with ALLL THE GREENS. Is there any meal I don’t end up making into a salad? NO WAY.
