Black Bean, Avocado And Fried Egg Breakfast Taco

Serves 4

Ingredients

4 almond flour tortilla

2 avocados, sliced

1/4 cup black beans

4 eggs

1/4 cup pico de gallo

Optional toppings: pickled onions, chopped poblano peppers, cotija cheese

Directions

Heat the tortilla in a dry skillet over medium heat for about 30 second per side. Set aside and keep warm while you fry your egg.  In the same skillet, add a bit of nonstick spray or olive oil, then add your egg.  Cook to your liking. 

Add avocado, black beans and pico de gallo to the tortilla and top with the egg. Add optional extra toppings and enjoy!
