For the Cauliflower

ingredients

  • 1 large head cauliflower, cut into florets
  • 1 tablespoon cooking oil
  • 1 teaspoon coriander
  • 1 teaspoon salt
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon cayenne

To Make the Cauliflower

Method

  • Step 1

    Preheat the oven at 425ºF. Toss cauliflower florets, oil and all the spices in a large bowl. Set aside.

  • Step 2

    Spray a large cookie sheet with oil. Spread the marinated cauliflower florets on the sheet. Bake the cauliflower florets for 15 minutes. Remove from oven and set aside.

For the Tikka Masala Curry

ingredients

  • 1 large red onion, chopped
  • 3 cloves garlic
  • 1 large piece ginger
  • 1 green chile
  • 1 tablespoon vegetable oil
  • 1 (15 ounce) can Muir Glen Tomato Sauce No Salt Added
  • 1 tablespoon coriander
  • 1 1/2 teaspoons garam masala
  • 1 teaspoon cumin
  • 1 teaspoon cayenne pepper
  • Salt, To Taste
  • 1 teaspoon kasuri methi, optional
  • 1 cup heavy cream
  • 1 tablespoon honey, or to taste
  • 2 cups water

To Make the Tikka Masala Curry

  • Step 1

    Add onion, garlic, ginger and green chili to a blender. Blend until a smooth paste forms.

  • Step 2

    Place the inner sleeve inside the instant pot. Plug it in. Press the Sauté Mode and set it to High for 30 minutes. Once the screen displays Hot, add oil to the pot. Wait for 2 seconds and add puréed onions to the pot. Give it a good stir. Cover the Instant Pot with a lid and cook until onion paste becomes thick and changes color to slightly pink. Keep stirring occasionally to avoid burning the bottom, about 12-15 minutes.

  • Step 3

    Stir in the tomato sauce. Add ground coriander, garam masala, ground cumin, cayenne pepper, and salt to the pot. Give another good stir. Add water to the pot. Add kasuri methi, if using it.

  • Step 4

    Lock on the lid of the Instant Pot. Set the floating valve to Sealing. Press Manual / Pressure Cook and set it on High/More for 3 minutes. Once the timer goes off, you may follow NPR if you have the time or do QR if you don’t have time.

  • Step 5

    As the safety valve drops down, open the lid carefully. Add heavy cream and honey to the sauce. Stir and adjust seasoning to taste.

  • Step 6

    When ready to serve, add the oven roasted cauliflower florets to the warm Tikka Masala Sauce. Gently stir. Let it sit for 10 minutes before serving. Serve with naan or rice.
