Noodles in a rush 🏃🏻‍♀️💨 Here's one of my hacks for double-working my rice vermicelli: they only need 5 minutes in hot water to be ready, and I add greens (pak choi, spinach, green beans, peas) to get some quick-blanched veggies in without much extra effort! Once soft, I cool under a tap and spin everything instant dry in a sturdy salad spinner (I have a @oxo herb spinner) so I can pack in a bento box right away. Top noodles with protein of choice, nuts seeds, avo and more veggies and take to work in a bento box. . You may have seen this video before, well I'm in a total rush recently working on something exciting so I'm reposting my favourites! Soon I can tell you more (and then I hope you will forgive me that I've been rubbish at replying to your lovely comments) . The dressing is spicy Korean style: Ingredients 1 tablespoon #gochugaru (korean pepper most famously used in kimchi) 2 tablespoons rice vinegar 4 tablespoons toasted sesame oil 1 teaspoon fine grain salt Optional: 1 teaspoon coconut palm sugar or another natural sugar or suryp Optional: 1/4 teaspoon garlic granules . Method: Pour all ingredients in a small glass jar with lid and shake shake shake. Keeps for up to a month in the fridge and is delicious on pretty much everything. . Much love! Wintery comfort bento – one for me and one for A (gone with him to work) ???? AND .. @bentoparty, my inspiration account for all things bento + feature account is now back from its holiday! In my box: Carbs: Onigiri (riceballs) with sushi rice, hijiki seaweed, amaranth (a tiny grain which gives a chewy, satisfying texture) and a secret ingredient – chia seeds :) For a while now I've been experimenting with cooking different grains and seeds with white rice. An easy hack to make rice more nutritious without adding anything to cooking time, or even prep time. First time I tried chia today and I like it! I just put all seeds and grains together in a cooking pot, wash and cook just like I would white sushi rice. Once cooked, I stir through a little rice vinegar and sea salt. I used a small amount of chia, they plump up and add to making the rice sticky! . Leaves: Fry-steamed yau choy (chinese green leaves) and broccoli – stir fry in a little olive oil for a minute, add a little tamari, chili flakes and a splash of water and let steam under a lid for a couple of minutes. Radicchio leaves used as separators. . Protein: Refried white beans (cannellini), gently fried in virgin olive oil with smoked paprika, chili flakes, sea salt and a little lime juice. . Fruit & Veg: Cucumber sticks with a few drops brown rice vinegar (@clearspring), toasted sesame and korean pepper. Pomegranate seeds. . Happy Saturday! Here's a mocktail I made for our guests over the holidays. We enjoyed it so much I had to write the recipe down and make it again to shoot it ☺️ Recipe below! THANK YOU so much for all your lovely comments and welcome-backs on my post yesterday, my first in 3 weeks after a insta-holiday. You are the best and I feel so happy to share this space with you all :) . Sea Garden Kombucha​ ​Mocktail ???????????????????? These refreshing and slightly savoury little gardens sit somewhere between a mocktail and a fruit salad. You can use any frozen fruit (as icecubes), and any fresh herbs – I used what I had at hand. Give your guests wooden cocktail sticks so they can pick at the goodies as they sip :) . In each glass, place: 2 thin slices of (blood) orange + a little of its juice A couple of slices of persimmon and kiwi Fresh dill and mint, roughly torn 2-3 grains of coarse seasalt A twist of black pepper 1 frozen cucamelon 2 frozen cherries . Top up with #kombucha (I used @jarrkombucha Passionfruit) and if using a straw, use half a paper one, or glass or metal (never plastic????????). . Chili Massaged Kale
Happy Saturday! Garden bento and a massaged kale recipe I made for @monbento ? My favourite way to massage kale is in a bag! ? Well, um - a sturdy plastic bag ? = minimum mess, gentler for your hands and I usually reuse the bags - just fill with some very hot water, washing up liquid and air and give it a good shake! Dry upside down stuck to a clean vertical surface like a cupboard door. Yes it's my grandma's golden tip! ⭐️ ?Massaged kale in a bag with a gentle chili kick? Ingredients: Big handful kale (75g), washed, stems removed and torn in bite-sized pieces Juice of 1/2 lemon 1 teaspoon extra virgin olive oil 1/4 teaspoon quality salt (guerende, pink himalayan etc) 1/2 teaspoon Gochugaru – korean pepper powder OR 1/2 tsp paprika powder + one pinch hot chili powder Method: Place kale, lemon juice, olive oil, salt and Gochugaru in a plastic bag. I use the thicker zip bag that some of my organic veg is sold in. Twist the bag close and start ‘massaging’ the leaves inside. Soon they will become soft and release their juice. The kale is ready to place in your box! The kale 'juice' is delicious drizzled over rice, quinoa or vegetables. You can easily double or triple this recipe, the kale stays delicious in an airtight container for 2-3 days in the fridge. Have a lovely Saturday! Sara x #? #kale #shisobento #BentoExpo

Cashew Parfait
I was up early after a long recipe testing session last night :) All in preparation for my shiso bento attack this Saturday at @turningearthuk's ceramics easter sale. Here's a cashew parfait pot recipe I love having as a little power snack. Tastes like naughty ice cream .. but just full of goodness of course ;)
