Honey, Coconut And Apricot Macadamia Nut Bars

Ingredients:
1 cup roasted macadamia nuts
1 cup roasted cashew nuts
1/2 cup toasted coconut
1/4 cup almond meal
1/3 cup dried apricots (chopped)
1/3 cup honey
2 tbsp maple syrup
1 tbsp coconut oil
1 tsp vanilla bean paste
Directions:
Preheat oven to 350 degrees F. Mix all the dry ingredients in a mixing bowl
Add all the wet ingredients to a small saucepan and boil until bubbling for a few minutes. Pour over dry ingredients and mix well. Line a 8x8 inch pan with parchment paper and press the mixture firmly into the pan.
Bake in the oven for 10 minutes. Let cool in the fridge for 1 hour , then slice into bars with a bread knife.
Keep in an airtight container in the fridge for up to 2 weeks for a delicious snack!
