One of my resolutions for 2020 is to eat less meat, and not to brag or anything, but I’ve been doing a pretty great job of it so far. Don’t get it twisted--I’m nowhere close to being a full time vegan, but I’ve seriously committed to a strict vegetarian menu when I’m cooking for myself at home. One ingredient that I’ve reconnected with in this journey to save the planet is tofu! I am a firm (pun intended) believer that tofu can be super delicious, you just have to prepare it properly and serve it with delicious ingredients. These recipes will help you do exactly that!
