One of my resolutions for 2020 is to eat less meat. Hear me out--I'm far from a vegan and wouldn't consider myself a vegetarian either (hello, oysters), but I owe it to our sweet planet to reduce my overall meat intake. For me, this starts with the meals that I'm cooking at home, which is why I'm holding myself to strictly vegetarian dinners in the comfort of my own kitchen. If I'm out to dinner, you better believe you'll catch me feasting on anything from buffalo wings to short ribs!
