ingredients

  • 1/2 cup granulated sugar
  • 1/4 cup water
  • 3 1/2 tablespoons unsalted butter, softened
  • 1 1/2 tablespoons Kikkoman® Teriyaki Marinade & Sauce
  • 1 large pineapple
  • Vanilla bean ice cream, for serving

Method

  • Step 1

    In a small pot over medium heat, add sugar and water.

  • Step 2

    Let sit for about 5 minutes, swirling the pot when brown areas start to form.

  • Step 3

    When the sugar mixture is golden-brown, remove from heat.

  • Step 4

    Add butter and whisk to incorporate.

  • Step 5

    When fully incorporated, whisk in Kikkoman Teriyaki Sauce.

  • Step 6

    Pour into a heat-safe container and store in the fridge to cool.

  • Step 7

    Slice the pineapple width-wise into rings.

  • Step 8

    Cut the edges off and then core the middle (a shot glass will do the trick).

  • Step 9

    Grill the pineapple rings over mesquite coals until blistered, approximately 3 minutes on each side.

  • Step 10

    In a bowl, place one grilled pineapple ring and top with scoops of vanilla bean ice cream.

  • Step 11

    Top with another grilled pineapple ring and drizzle generously with Teriyaki Caramel.

  • Step 12

    Enjoy immediately.
