These easy dark chocolate espresso truffles are naturally sweetened with dates for a healthy take on a Valentine's Day treat.

For the Espresso Truffle

ingredients

  • 1/2 cup raw walnuts, soaked in water at least 4-6 hours or overnight
  • 1 cup pitted dates, soaked in water at least 4-6 hours or overnight
  • 1/4 cup raw cacao powder
  • 2 tablespoons coconut oil
  • 1 tablespoon ground coffee
  • Pinch of sea salt

For the Chocolate Coffee Coating

ingredients

  • 1 bar dark chocolate, chopped
  • 2 teaspoons ground coffee
  • 1 tablespoon coconut oil
  • Flaky salt, to top
  • Coffee grounds, to top

Method

  • Step 1

    In a food processor, combine soaked nuts, dates, cacao powder, coconut oil, coffee grounds and sea salt . Pulse for 2-3 minutes or until well-combined, adding up to 2-3 tablespoons of additional coconut oil as needed for the mixture to form.

  • Step 2

    Scoop a tablespoon of the mixture onto parchment paper and form into a ball. Repeat until all of the mixture is formed into balls. Refrigerate for at least 1 hour.

  • Step 3

    Combine chocolate and coconut oil in a heatproof bowl and microwave in 30 second increments until smooth and melted. Add the coffee grounds and stir well.

  • Step 4

    Dip the chilled truffles into the chocolate mixture and place back on the parchment paper lined tray. Refrigerate for 1-2 more hours until set. Sprinkle with flaky sea salt and coffee grounds. Store in the refrigerator and enjoy.
