For the cake

ingredients

  • 2/3 cup vegan butter
  • 1 cup plus 2 tablespoons gluten-free all purpose flour
  • 2/3 cup fine white rice flour
  • 2/3 cup plus 4 tablespoons white sugar
  • 2 tablespoons brown sugar
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 1 teaspoon lemon zest
  • 6 1/2 tablespoons lemon juice
  • 13 1/2 tablespoons lemon flavored unsweetened sparkling water

For the Frosting

ingredients

  • 1 1/4 cup powdered sugar
  • 1 teaspoon turmeric powder
  • 1 to 2 tablespoons lemon juice

Method

  • Step 1

    Grease and flour the bundt pan. Melt butter and let cool. Mix dry ingredients, add liquids. Mix gently together and pour into the pan. Bake 347 F for about 50 minutes. Let cool, take cake from the pan and frost it.

  • Step 2

    Once the cake is cooled, mix all the ingredients for the frosting, pour over cooled cake and serve.

  • Step 3

    Note: gluten free flour, may contains psyllium so the flour mix absorbs quite a lot of liquid. If using another brand of gluten free all purpose flour, you might need to add a little bit of psyllium or adjust the amount of liquids.
