A Note from Feedfeed

Normally I find lavender to be too overwhelming, but this recipe uses such a small amount so the flavor is actually pretty subtle! Win! Scones and biscuits are easy baking projects that you can make ahead. Prep the dough the night before, cut out your scones, and then pop them in the freezer on a parchment lined baking sheet and wrap in plastic. In the morning, take them out, apply egg wash, and then bake from frozen!

For the Scones

ingredients

  • 2 cups all-purpose flour
  • 3 tablespoons sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon sea salt
  • 1/2 cup cold and cubed unsalted butter
  • 2/3 cup milk of choice
  • 1 lemon, zested and juiced
  • 1 teaspoon culinary lavender
  • 1 large egg, beaten with 1 tablespoon of water for egg wash

For the Glaze

ingredients

  • 1 cup powdered sugar
  • 1 tablespoon lemon zest
  • 2 tablespoons lemon juice

For the Scones

Method

  • Step 1

    Preheat oven to 400°F.

  • Step 2

    Mix all the dry ingredients in a bowl. Add in cold butter and use a pastry cutter to incorporate into the flour. The pieces of butter should be about the size of a pea.

  • Step 3

    Add milk a little at a time and don't overmix. Stir in lavender and lemon and mix until just combined.

  • Step 4

    On a lightly floured surface, fold and turn the dough a few times. Roughly shape the dough into a 1.5 inch thick disk. Cut into triangles, like you would a pie and place on a parchment lined baking sheet. Bake for 15-20 minutes.

  • Step 5

    Remove scones from oven and allow them to cool slightly before drizzling with lemon glaze.

For the Lemon Glaze

  • Step 1

    In a small bowl, whisk together powdered sugar, lemon zest, and lemon juice. Drizzle over warm scones and garnish with a sprig of lavender.
