Honeycomb candy is made with three very basic ingredients- sugar, golden syrup and baking soda! If you don’t have golden syrup, you could use liquid glucose or honey of the same amount 🥰

Be careful to not overcook the sugar or the honeycomb will taste burnt, also don’t stir too much after adding the baking soda else the structure will deflate.

ingredients

  • 30 grams liquid glucose/golden syrup/honey
  • 100 grams sugar
  • 4 grams baking soda

Method

  • Step 1

    Caramelize the sugar and liquid glucose until golden brown, or around 300F.

  • Step 2

    Add the baking soda to it and whisk to combine. The mixture will foam up.

  • Step 3

    Transfer to a baking pan lined with parchment.

  • Step 4

    Allow the honeycomb to cool completely before slicing.

  • Step 5

    Store in an airtight container.
