ingredients

  • 30 grams oat flour
  • 20 grams vanilla protein powder
  • 1/2 teaspoon baking powder
  • 40 grams pumpkin purée
  • 10 ml maple syrup
  • 50 grams egg whites
  • 80 ml almond milk
  • 50 grams protein chocolate pudding, for filling
  • 1 teaspoon ground cinnamon, for topping
  • 2 teaspoons brown sugar, for topping

Method

  • Step 1

    Mix all dry ingredients. Add pumpkin puree, maple syrup, egg whites, and finally add almond milk gradually to create a smooth thin crepes batter (the amount also depends on the protein powder). Mix well.

  • Step 2

    Spray a pan with anti sticking spray and heat the pan.

  • Step 3

    Pour some of the batter to the pan over medium heat and move the pan in a circular form to spread the batter. Flip when it’s ready. Repeat for other crepes.

  • Step 4

    Fill each crepe with the filling and fold.

  • Step 5

    Top with the mixture of sugar and cinnamon. Enjoy!
