ingredients
- 2 tablespoons coconut oil
- 3 minced garlic cloves
- 1 Chopped onion
- 1 (4 ounce) can red curry paste
- 1 (14 ounce) block squared tofu
- 1 (15 ounce) can coconut milk (or 2 cups unsweetened almond milk)
- 10 ribs removed and leaves torn thai basil
- 4 cups spinach
- To Taste Salt
Method
Step 1
1. Fry the garlic with coconut oil until slightly brown.
Step 2
2. Add red curry paste and chopped onions. Cook on medium-low for about 5-10 minutes or until onions are caramelized.
Step 3
3. Add coconut milk and tofu. Cook on low for another 10 minutes.
Step 4
4. Taste to see if salt is needed. The red curry paste usually has salt already.
Step 5
5. Add spinach and thai basil leaves, and cook on low for another 5 minutes.
