ingredients

  • 2 tablespoons coconut oil
  • 3 minced garlic cloves
  • 1 Chopped onion
  • 1 (4 ounce) can red curry paste
  • 1 (14 ounce) block squared tofu
  • 1 (15 ounce) can coconut milk (or 2 cups unsweetened almond milk)
  • 10 ribs removed and leaves torn thai basil
  • 4 cups spinach
  • To Taste Salt

Method

  • Step 1

    1. Fry the garlic with coconut oil until slightly brown.

  • Step 2

    2. Add red curry paste and chopped onions. Cook on medium-low for about 5-10 minutes or until onions are caramelized.

  • Step 3

    3. Add coconut milk and tofu. Cook on low for another 10 minutes.

  • Step 4

    4. Taste to see if salt is needed. The red curry paste usually has salt already.

  • Step 5

    5. Add spinach and thai basil leaves, and cook on low for another 5 minutes.
