I am a huge marzipan lover and just adore anything almond-scented. These almond croissant-inspired stuffed dates are a wholesome treat that pack the flavor of an almond croissant. Keep these delicious stuffed dates around for a post-workout treat or whenever you need a little sweetness.
Recipe Description
An easy homemade version of marzipan comes together with just almond flour, honey, and almond extract and is super versatile. I have been adding it to my smoothies for extra protein and a delicate flavor that makes my smoothie taste like dessert. The toasted almonds on the outside of these dates lend a delicate crunch that a typical almond croissant would have, minus the buttery pastry (although sometimes nothing beats the real thing!) I dusted mine in powdered sugar for the "almond croissant effect," but that is completely optional. Seek out the squishiest, caramelly-est dates you can find to make shaping the dates even easier. These special little treats would make a great edible gift.

- 12 whole medjool dates
- 1 cup almond flour
- 1/3 cup honey, (plus more as needed)
- 1 teaspoon almond extract
- 1/2 cup toasted sliced almonds, chopped
- Powdered sugar, for garnish (optional)
Method
Step 1
Tear the dates in half but try not to separate the two pieces. Remove and discard the pits. Carefully press the date to flatten it, then flip it inside-out so that the sticky interior part is on the outside.
Step 2
Stir the honey and almond extract into the almond flour until it forms a marzipan consistency. It should feel moist and pliable. Add more honey or more almond flour to adjust, if necessary.
Step 3
Stuff each date with a 1" piece of the almond filling, then pinch the edges of the dates together to seal.
Step 4
Press each date into the chopped toasted almond to adhere. Dust with powdered sugar, if desired.
Step 5
Almond croissant-inspired stuffed dates can be kept in an airtight container at room temperature for up to 1 month.
