Bun Nem with Prawns

"This is a recipe for Bun Nem with Prawns. Do you already know Bo Bun? Bun Nem is a variation of this Vietnamese salad made with spring rolls instead of beef. In the following recipe I have mixed spring rolls and shrimps to add even more flavour to this salad! Vietnam is one of my favourite destinations. The country has so much to offer! I had the chance to visit it twice and I would return there at the first opportunity."

For the salad

ingredients

  • 200 gram rice noodles
  • 4 spring rolls
  • 6 large prawns
  • 100 gram soy bean sprouts
  • 100 gram salad leaves
  • 1/4 cucumber
  • 2 carrots
  • 1 lime

Fot the sauce

ingredients

  • 4 tbsp fish sauce
  • 2 tbsp rice vinegar
  • 1 tsp sugar
  • 75 milliliter water
  • 1 pinch salt
  • 1 clove of garlic
  • 1/2 red chili (optional)

Method

  • Step 1

    Cut the carrots and cucumber into thin strips. Blanch the soy sprouts by soaking them for 10 minutes in hot water. Mix the lettuce leaves and herbs.

  • Step 2

    Cook the rice noodles according to the instructions on the packet and then rinse them in cold water to prevent them from sticking.

  • Step 3

    Mix all the ingredients for the sauce.

  • Step 4

    Heat the oil in a frying pan or wok and fry the prawns. Once cooked, remove and fry the spring rolls. Cut the spring rolls into two or three pieces of equal size.

  • Step 5

    In a bowl, place a portion of noodles, then add the carrots, cucumber, soy sprouts, salad and herb mixture. Arrange the prawns and egg rolls on top.

  • Step 6

    Pour in the sauce. Depending on you taste, you can squeeze the lime and add finely chopped red chilli pepper on top of the bowl.
