ingredients
- 3 eggs
- 1/2 cup milk
- 1/3 cup pumpkin puree
- 1/4 teaspoon cinnamon
- pinch salt
- 2 slices gluten free bread
- 1 tablespoon butter
- Pecans, for topping
Method
Step 1
Whisk eggs, milk, pumpkin, cinnamon and salt in a bowl. Dip bread into the bowl, coating both sides for 30 seconds each.
Step 2
Heat butter in a skillet over medium. Cook bread on each side for 2-3 minutes, until golden brown.
Step 3
Top with more butter, maple syrup, cinnamon and pecans if desired.
