Honeycomb Candy

Makes About 30 Pieces of Candy

1 1/2 cups sugar

1/2 cup water

1/4 cup tablespoons honey

1/3 cup light corn syrup

4 teaspoons baking soda

Directions:

Combine all ingredients in a small sauce pot. Cook on medium heat being careful not to stir too often. Clean any sugar crystals on the side of the pot with a wet brush. Cook until mixture is caramel in color and thickened. Add baking soda and rapidly stir to distribute. Immediately transfer to a silpat-lined baking sheet and let set overnight. Break into small pieces and keep in an airtight container.
