Sweet Potato & Bacon Skillet Hash
2 medium sweet potatoes, peeled and chopped into small cubes (about 3 cups)
2 strips bacon
1 cup bell pepper, chopped
1/2 cup red onion, finely chopped
2 cups fresh spinach
2 tbsp chopped basil
1 tbsp sage, finely chopped
1/2 tsp sea salt
1/4 tsp black pepper
Cook bacon in a large oven-safe skillet over medium heat until fully cooked. Set strips of bacon on a plate.
Preheat oven to 425 degrees. Add sweet potato, bell pepper and onion to skillet with bacon drippings. Cook 12-15 minutes over medium/high heat stirring regularly until potatoes are tender.
Chop bacon and stir into skillet along with spinach, sage, basil, sea salt and pepper. Crack eggs over skillet with vegetables and immediately transfer to oven. Bake 8-9 minutes.
