Recipe Card

For the Dough

ingredients

  • 3 cups fine semolina
  • 1/2 cup vegan butter, melted
  • 1/4 cup olive oil
  • pinch of Kosher salt
  • 1 teaspoon orange blossom water
  • water, as needed

For the Filling

ingredients

  • 1 pound date paste
  • 1 tablespoon honey
  • 1 teaspoon cinnamon
  • 1/2 teaspoon cloves
  • 1 teaspoon oil

For the Dough

Method

  • Step 1

    In a large bowl, mix semolina, butter/oil, orange blossom water and a pinch of salt. Cover and place in the fridge overnight.

  • Step 2

    The next day, add water little by little and knead until you get a stiff dough consistency, 10 minutes. Divide the dough in two equal parts and set aside.

For the Filling

  • Step 1

    Place a medium sized pot of water on the stove, topped with another metal bowl or pot. To this add the date paste, spices, oil and agave or honey and cook until the paste is soft and smooth, 1-2 minutes. Set aside to cool a bit.

For the Assembly and Cooking

  • Step 1

    Knead one part of the semolina dough to a disc 1/4 inch thick using your hands. If the dough is sticking to your hands, cover the surface with plastic wrap or parchment paper to avoid sticking.

  • Step 2

    Place the date dough on top of this disc and press until you obtain a uniform layer of the same size.

  • Step 3

    Knead the other half of the semolina dough to a disc of the same size and place it on top.

  • Step 4

    Cut into diamond shaped and if you want decorate the surface on one side with a pattern using a fork or back of a knife

  • Step 5

    Cook on both sides in a wide pan on medium heat, 6-7 minutes in total.
