Ingredient Notes

  • Chosen Foods 100% Pure Avocado Oil: Is a versatile and better for you option for baking. It has a high smoke point, making it ideal for recipes requiring higher baking temperatures. Its neutral flavor allows the rich taste of the browned butter and chocolate to shine, while the healthy fats keep the cookies moist and tender.

Chosen Foods 100% Pure Avocado Oil Spray: This spray is the perfect kitchen companion, offering you versatility and a high smoke point. It provides an even, non-stick surface, ensuring your cookies bake evenly and release effortlessly from the tray. The spray is made from 100% Pure Avocado Oil, offering the same benefits and neutral flavor as the bottled version.

Test Kitchen Notes

  • Using Chosen Foods 100% Pure Avocado Oil: This oil is perfect for baking due to its high smoke point and neutral flavor, which complements the rich taste of browned butter without overpowering it. The oil also helps keep the cookies moist and tender.

Browning the butter: Be sure to watch the butter closely as it browns, stirring constantly to avoid burning. The deep amber color and nutty aroma indicate it's ready.

Shaping the cookies: For perfectly round cookies, use a round cookie cutter to gently swirl around each cookie immediately after baking. This smooths the edges and gives them a professional look.

Avoid Overmixing: When combining the wet and dry ingredients, mix just until combined. Overmixing can lead to tough cookies, so it's best to gently fold in the ingredients to maintain a soft, tender texture.

Chill the Dough (Optional): For thicker, chewier cookies, consider chilling the dough for at least 30 minutes before baking. This helps to firm up the dough and prevents the cookies from spreading too much during baking.

Portion Size Matters: To ensure even baking, use a cookie scoop or measuring spoon to portion the dough consistently. This helps achieve uniform cookies and ensures they bake evenly.

Baking Time and Temperature: Keep a close eye on the cookies towards the end of the baking time. The cookies are done when the edges are golden and the centers are still slightly gooey. They will continue to set as they cool, so avoid overbaking.

ingredients

  • 1/2 cup (115 grams) unsalted butter
  • 1 1/4 cups (185 grams) all-purpose flour, spooned and leveled
  • 1/2 teaspoon baking soda
  • 1 teaspoon sea salt
  • 2 tablespoons Chosen Foods 100% Pure Avocado Oil
  • 1/2 cup (100 grams) light brown sugar
  • 1/3 cup (67 grams) granulated sugar
  • 1 large egg
  • 1 tablespoon vanilla extract
  • 1 cup semi-sweet chocolate chips, plus more for garnish (optional)
  • Chosen Foods 100% Pure Avocado Oil Spray, for greasing the tray
  • Flaky sea salt, for garnish

Method

  • Step 1

    Preheat the oven to 350°F.

  • Step 2

In a medium saucepan, melt the butter over medium heat. Stir constantly until the butter turns a deep amber color.

  • Step 3

In a bowl, combine flour, baking soda, and salt; set aside.

  • Step 4

In a separate bowl, mix the cooled brown butter and avocado oil with the brown and granulated sugars. Whisk for 1-2 minutes until the mixture is paste-like.

  • Step 5

Add the egg and vanilla, and mix until well combined, about 2-3 minutes.

  • Step 6

Gently fold in the dry ingredients until just combined, then fold in the chocolate chips.

  • Step 7

Lightly spray a baking sheet with the avocado oil spray. Scoop 5 cookie dough balls onto the sheet, spacing them apart, as they spread while baking. Top the cookie dough balls with more chocolate chips, if desired.

  • Step 8

Bake for 12 minutes until golden around the edges and gooey in the center. Repeat with remaining cookie dough. Note: As soon as the cookies come out of the oven, place a large round cookie cutter or a circular drinking glass around each cookie (the cookie cutter should be larger than the cookie) and give the cookie inside a spin. This will help smooth any uneven edges.

  • Step 9

Sprinkle with flaky sea salt and let cool before serving.
