Melon, Nectarine And Peach Salad With Cured Ham
"Hot summer day and a light flavorful salad using my favorite summer fruit honey dew melons, shavings of nectarines and donut peaches, red onion, a bit of jalapeno, juicy tomatoes and cherry tomatoes from the market, with rashes of delicious jamon Serrano, and a honey lime evoo vinaigrette, add some fresh cilantro and parsley on top and serve! The perfect appetizer to share with friends, a good chat and a glass of wine!"

Serves 4

Ingredients
1 honeydew melon
3 nectarines
2 donut peaches
1 jalapeño
1/2 red onion
2 vine tomatoes
2 cups of cherry tomatoes
5-6 slices jamon ham or prosciutto
Handful of cilantro and parsley
Maldon salt, black pepper
2 tbsp extra-virgin olive oil
1 tbsp lime juice
1-2 tsp honey or agave nectar

Directions
Make sure you chill your fruit before preparing your salad. Get your melon and cut it in half lengthwise, scoop the seeds out, cut your melon in slices ( half moons ) get rid of the skin and place in a large bowl, then get your mandolin and slice the sides of your nectarines, donut peaches and jalapeño into the bowl, do the same with your red onion, cut your vine tomatoes in big chunks and add them, cut your cherry tomatoes in half, roughly chop your cilantro and parsley and add it to the rest of the ingredients.


Add the extra virgin olive oil, the honey or agave nectar to taste and the lime juice into the bowl, mix with your hands and add a pinch of maldon salt and black coarse pepper, taste and adjust seasoning.
Serve on a nice platter spreading your salad and add rashers of Jamon Serrano on top, you can add more fresh herbs and it's ready to serve, enjoy alongside a good chilled white, enjoy!
