"Vegan Eggplant Shakshuka ?? Full recipe on the blog - direct link in profile ? All tomatoey and spicy, cooked in my new @neoflamau Healthy Pan with a non-toxic ceramic non stick coating. I love new pans where everything slides right off it ? I can't believe it's over a year since I made this last. Instead of the traditional egg I used last time, this time I used soy yoghurt mixed with kala namak for that eggy flavour, and some nutritional yeast. Check out the full recipe for details. I ended up eating this today (As seen on Snap and Insta Stories) over some steamed broccoli, as I was dying for some veggies ?? But it would also be good over some zucchini noodles or with some chickpeas cooked through it for extra protein. But it's pretty filling by itself ? I hope you give it a try ?
