  • 5 cups all purpose flour
  • 2 1/2 cups slightly hot water
  • 1/2 cup neutral oil
  • 2 tablespoons yeast
  • 2 teaspoons kosher salt

  • 1 large diced onion
  • 2 large minced garlic cloves
  • 2 teaspoons cumin
  • 2 teaspoons coriander
  • 2 teaspoons ginger
  • 1 teaspoon chili powder
  • 1 teaspoon turmeric
  • to taste Kosher salt
  • 2 pounds beef roast
  • 2 peeled and cut into chunks carrots
  • 2 cut into chunks potatoes
  • 2 (14.5 ounce) cans Muir Glen Fire Roasted Diced Tomatoes
  • 4 cups water

Method

Afghan Bread

  • Step 1

    In a large bowl, combine flour, water, oil, yeast, and salt. Knead the mixture into a smooth dough ball. Cover and let it rise for 1 hour.

  • Step 2

    Divide the dough into two balls and flatten them on baking sheets. Lightly spray with oil and water.

  • Step 3

    Use your fingers to create ridges in the dough, smoothing with water as needed.

  • Step 4

    Place the trays on the lowest rack of an oven preheated to 400°F and bake for 30 minutes.

Shorwa

  • Step 1

    In a pressure cooker, heat olive oil over medium heat. Sear the beef roast until browned on all sides, then set aside.

  • Step 2

    Add diced onions and sauté until softened. Stir in garlic, cumin, coriander, ginger, chili powder, turmeric, and salt. Cook until fragrant, about 1-2 minutes.

  • Step 3

    Return the beef to the pot. Add carrots, potatoes, Muir Glen Fire Roasted Diced Tomatoes, and water. Stir to combine.

  • Step 4

    Secure the pressure cooker lid and cook on high pressure for 30 minutes. Let the pressure release naturally for 5-10 minutes, then perform a quick release.

  • Step 5

    Tear Afghan bread into pieces and place them at the bottom of serving bowls.

  • Step 6

    Ladle the stew over the bread, ensuring each bowl has a mix of beef, vegetables, and broth.
