It's #NationalGlutenFreeDay! 🍞 In 2012, I was sick, tired and was at the point I would do anything to feel better. I was on a handful of drugs and felt let down by conventional healthcare. Feeling helpless, I began doing my own research and had no idea what gluten was but the symptoms described checked off everything I was feeling. I committed to cutting it out for 3 months, which has now led into 6 years. My severe pain and digestive issues quickly went away, along with symptoms I never thought to be associated with food including lifelong asthma, seasonal allergies and anxiety. ✨ It may sound crazy to say, but modifying my diet turned into a full lifestyle adjustment which has completely changed me as a person. Before that, I was a university student who partied A LOT and lived on gluten. The past 6 years have been a journey that has made me more aware of how I treat my body and beyond that, has lead me into the holistic wellness, self care/love & mindfulness realm. If it weren’t for the journey, I would have never found what I’m meant to do or have found this amazing community! Thank you for following along💗✨ #goinggrainless
Raise your hand if you could eat pizza every day ??Everything from my move is unpacked except for 3 big boxes of pantry ingredients because I’m still on the hunt for a storage unit to put it all (any suggestions). Since I couldn't get to my regular ingredients, I used whatever was in my fridge to make a different kind of pizza. So here we have #grainless eggplant pizza bites! ? Preheat oven to 400F. For the “crust” peel of the eggplant skin then cut into 1/2 inches pieces. Brush with oil and bake for 5 minutes on each side. Remove from oven then top with your fave ingredients. I used tomato sause, homemade almond cheese (still working on the recipe), onion, tomato and basil. Place back in oven for 5-7 minutes. #goinggrainless
