Pan Fried Radish Buns with Shiitake Mushrooms

  • 4 cups radishes, grated into thin strips
  • 1/4 pound fried five spice tofu, sliced
  • 3/4 cup shiitake mushrooms, Thinly sliced
  • 1 scallion (white part only), chopped
  • 1 teaspoon chilis
  • 1 tablespoon garlic, chopped
  • 1 teaspoon ginger paste
  • 1/2 teaspoon salt
  • 1 tablespoon sugar
  • 1/2 teaspoon white pepper
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1/2 tablespoon hoisin sauce
  • 4 tablespoons neutral cooking oil



  • 2 cups (plus 1 tablespoon) all purpose flour
  • 1/4 cup cold water
  • 2/3 cup boiling water
  • 1/2 teaspoon salt


  • Step 1

    Blanch the grated radishes in boiling water for 10 minutes (to get rid of the raw taste). Soak in cold water (to cool). Using a towel, squeeze out the water from the radish and place in a large mixing bowl.

  • Step 2

    Add the mushrooms, five spice tofu, scallions, chilis, garlic, ginger paste, salt, sugar and white pepper into the mixing bowl with radish. Heat 2 tablespoons of oil and add to the ingredients in the bowl.

  • Step 3

    Add soy sauce, sesame oil and hoisin sauce. Mix well until combined and set aside.

  • Step 4

    In a separate mixing bowl, combine flour and salt. Then slowly add the boiling water by mixing the flour with chopsticks, followed by the cold water. Mix until no dry flour remains, then knead by hand until a soft dough forms. Cover and rest the dough for 20 minutes. After 20 minutes, knead another 2-3 minutes.

  • Step 5

    Divide the dough into 6 equal pieces, cover with a kitchen towel and rest for 30 minutes.

  • Step 6

    Take out one dough ball at a time, flatten a little and fill the center with the radish filling. Wrap the dough over the filling and seal the top to form a bun. Cook buns on a heated skillet with oil for 2 minutes one side then flip and cover. Cook for 2 minutes more. Remove buns onto a lined plate, serve and enjoy.
