ingredients

  • 4 medium sweet potatoes
  • 2 tablespoons olive oil
  • Himalayan pink salt
  • 1/2 cup tahini
  • 2 tablespoons maple syrup
  • fresh lemon juice 
  • 1 clove garlic
  • 2 tablespoons hot water, to thin
  • 2 ripe avocados
  • 2 cups arugula
  • hemp hearts, for serving
  • toasted pepitas, for serving

Method

  • Step 1

    Preheat oven to 425°F.

  • Step 2

    Scrub potatoes and rub with olive oil. Season with salt and pepper, and prick them all over with a fork. Bake at 425°F (directly on the oven racks or on a tinfoil-lined baking sheet) until inside is soft, about 50-60 minutes, rotating half way through.

  • Step 3

    For the sauce, whisk tahini, maple syrup, garlic clove, hot water, and salt until smooth. 

  • Step 4

    Slice potatoes in half, stuff with arugula, avocado, pepitas and hemp hearts. Drizzle with tahini sauce and serve immediately.
