A Note from Feedfeed

This angel hair pasta utilizes sheet pan roasted cherry tomatoes and fresh basil for a simple sauce that can be whipped up easily on a weeknight. The creamy burrata on top is an added bonus.

ingredients

  • 2 pints cherry tomatoes
  • 1 pound angel hair pasta
  • 2 handfuls fresh basil, chopped
  • 1 ball burrata
  • Salt and pepper, to taste
  • 1 teaspoon red pepper flakes
  • 1 tablespoon fresh parsley, chopped
  • Olive oil

Method

  • Step 1

    Preheat the oven to 400º F.

  • Step 2

    Toss 2 pints of cherry tomatoes lightly with olive oil on a sheet pan. Spread them out into one layer and sprinkle generously with kosher salt and pepper. Roast for 15 to 20 minutes, until the tomatoes are soft, wrinkly and beginning to break down.

  • Step 3

    Meanwhile, bring a large salted pot of water to a boil and cook pasta according to package instructions. Drain, reserving one cup of pasta cooking water, and return it to the pot. Add the roasted tomatoes and their juices to the pasta along with 2 handfuls of chopped basil. Season with salt and pepper. Add 1 teaspoon red pepper chili flakes, 1 tablespoon chopped parsley and the reserved pasta water. Stir to combine.

  • Step 4

    To serve, transfer to a dish and drizzle with plenty of olive oil. Top with torn pieces of Burrata cheese.
