Gluten Free Meal Plan: August 21st

This week we have some super flavorful (and fun!) recipes to share with you!

To begin the week, we have these cheesy arepas con queso. If you've never tried this South American dish, you're in for a treat- made with a soft maize dough filled with salty cheese, sweet plantains, and black beans. For Tuesday, this Honey Mustard Chicken Salad with Avocado is everything you want in a dinner salad: roasted chicken, salty bacon, and creamy avocado; and don't forget the 5-ingredient honey mustard dressing, which we recommend preparing ahead of time. On Wednesday, we went with a BBQ theme; pulled pork is super easy to throw into a pressure cooker or slow cooker, which makes these sandwiches a great weeknight meal, plus, all the leftover pulled pork can be used for nachos or taco bowls (just some suggestions!). We've paired this recipe with baked beans that look too good to pass up. August is peak corn season, so we could not resist adding this creamy chowder to top off this week's meal plan.

Stone fruit is also at its peak ripeness. This Rum and Brown Sugar Roasted Summer Fruit dessert is a great way to celebrate Summer before Fall hits.

Pork Belly Moonshine Baked Beans
By @Shelbyykhan

The Duke's BBQ sauce highlights these baked beans, but any smoky full-flavored sauce will work in this recipe, loaded with unctuous pork belly; this recipe is filling enough on its own, served with a big wedge of buttered cornbread
