These zucchini bites are so delicious and easy to make. Perfect vegetarian dish packed with protein. They are also great for meal prep. Simply store in air tight container and reheat in air fryer or oven (so it’s crispy again). Also delicious cold. Serve with your favorite dip, I like mine with yogurt ranch.

ingredients
- 2 medium-sized zucchini
- 2 eggs
- 1 heaping spoonful Greek yogurt
- 2 garlic cloves, crushed
- Salt and pepper, to taste
- 1 cup finely shredded parmesan
- Splash of milk
- 2 tablespoons flour
- Oil, for frying
Method
Step 1
Cut zucchini into bite size coins, season with salt and let it “sweat” for few minutes while you are working on Parmesan batter.
Step 2
Beat eggs, add yogurt, salt, pepper, garlic, flour, Parmesan and splash of milk. Mix until batter is well combined.
Step 3
Dry off “sweated” zucchini coins with paper towel.
Step 4
Dip each zucchini coin into batter.
Step 5
Preheat skillet, add oil and add zucchini bite coated in batter into the skillet.
Step 6
Pan fry until golden brown on both sides.
Step 7
Place fried zucchini bites on paper towel to get rid of the excess of oil.
Step 8
Serve with your favorite dipping sauce.
