ingredients

  • 6 slices of thick ham
  • 4 thick slices sourdough bread
  • 2 teaspoon Dijon mustard
  • 25 grams unsalted butter
  • 20 grams plain flour
  • 150 grams full fat milk
  • 1 pinch of salt and pepper
  • 1 teaspoon nutmeg
  • 4 tablepoons gruyere or tasty cheese
  • 2 eggs

Method

  • Step 1

    Melt butter in a heavy duty pan. Add flour once melted and whisk briskly until becomes a paste. Reduce the heat to low and whisk in the milk a little at a time to avoid any lumps. Add nutmeg and remove from the heat and set aside too cool.

  • Step 2

    Arrange slices of bread on a board. Spread mustard on one side of the bread and top with the béchamel (ensuring it is an even thickness). Top with ham slices. Join bread together. Lather with béchamel and cheese to top.

  • Step 3

    Place in a pan, cheese side up, and cook for 3-5 minutes or until golden. Place under a grill for 5 minutes or until the cheese and béchamel is melted and gooey.

  • Step 4

    Meanwhile, heat 1 tablespoon of vegetable oil in a pan and crack the eggs in, individually. Fry for 3-4 minutes or until the white sets and the edges turn crispy.

  • Step 5

    Place the sandwich on a plate, top with the fried egg, sea salt and freshly cracked black pepper. A sprinkle of finely chopped chives are perfect here.
