The rich & creamy sauce uses canned Red Gold® Whole Peeled Tomatoes, in addition to fresh cherry tomatoes for maximum flavor. Make the homemade pasta sauce, then cook your favorite pasta shape in the sauce. Top the dish with parmesan cheese and fresh mozzarella before serving.
Want to up the flavor? Use chicken broth in lieu of boiling water when cooking the noodles.

What kind of pasta should I use?
Serve this tomato pasta over your favorite pasta! Some of our favorite choices are tagliatelle, rigatoni, and conchiglie.
Can I add protein?
Absolutely! This would taste delicious alongside seared chicken or shrimp.
Can I use onions instead of shallots?
Definitely – onions & shallots are from the same family. The flavor will be slightly different, but tasty nonetheless.
Is there a substitute for spinach?
You can omit entirely or use kale.

ingredients
- 1 (14.5 ounce) can Red Gold® Whole Peeled Tomatoes
- 1 pint cherry tomatoes, halved or whole
- 2 large shallots, diced
- 1 tablespoon olive oil
- 2 cups water
- 8 ounces dry pasta noodles
- 1 tablespoon Italian herb seasoning
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 cup baby spinach
- 1/2 cup shredded or grated mozzarella
- 1/4 cup heavy cream
- 1/4 cup fresh basil, chopped
- 1/4 cup grated parmesan
Method
Step 1
In a large pot over medium high heat, add the olive oil.
Step 2
Add the chopped shallots, minced garlic, and halved cherry tomatoes to sautée for 5-6 minutes, until the tomatoes are bursting.
Step 3
Add Red Gold® Whole Peeled Tomatoes and use your spatula to help break up the tomatoes into small pieces as it cooks down for 1-2 minutes. (Optional: Use an immersion blender to blend half of the tomato sauce.)
Step 4
Add the dry pasta and stir in the sauce. Add the water, bring to a boil, then cover to cook until al dente, about 8-12 minutes.
Step 5
Stir in the seasonings.
Step 6
Stir in the heavy cream and baby spinach. Continue stirring until the baby spinach is wilted, about 1 minute.
Step 7
Stir in the mozzarella, grated parmesan, and chopped basil to enjoy warm!
