ingredients

  • 2 tablespoons olive oil, divided
  • 3 cups kale, cut into ribbons
  • 2 tablespoons capers, unrinsed
  • 2 teaspoons course salt, divided
  • 1 lemon, halved
  • 2 cups shredded rotisserie chicken
  • 5 ounces cotija cheese, crumbled
  • 1/4 cup cream cheese, dairy-free (if preferred)
  • 1 (8 ounce) bottle Annie's Organic Caesar Dressing
  • 8 medium flour tortillas

Method

  • Step 1

    Preheat oven to 425 degrees F. Coat a baking dish with 1 tablespoon olive oil.

  • Step 2

    Add kale and capers to a medium bowl. Add 1 teaspoon salt and the juice of one lemon half. Massage the mixture for about 10 seconds just to get the kale slightly softened and to open the capers up.

  • Step 3

    Wrap tortillas in aluminum foil and bake for 5 minutes or until warmed.

  • Step 4

    In a bowl, mix chicken, cotija cheese and cream cheese. Add 1/4 cup Annie's Organic Caesar Dressing, mixing until combined.

  • Step 5

    Add chicken filling to warm tortillas, rolling tightly. Place in baking dish. Brush tops with remaining olive oil and salt. Bake for 12 minutes or until the tops are golden brown.

  • Step 6

    Squeeze remaining lemon half into a bowl and mix with ¼ cup dressing. Serve with roll ups.
