Oatmeal & Raspberry Cookie Sandwiches With Whiskey Ice Cream

Cranachan a.k.a. Atholl Brose is a traditional Scottish dessert of whipped cream, honey, toasted oats and raspberries soaked in whisky overnight and served like a parfait. @acornsandcustard’s version is whisky ice cream sandwiched between oatmeal raspberry cookies. Scrumptious!
