Salad Base
- 1 cup cooked quinoa
- Asparagus
- Cucumber
- Tomatoes
- Paprika
- 1 avocado
- 1/2 red onion
- Halloumi
ingredients
Dressing
- 2 tablespoons extra virgin organic olive oil
- 2 teaspoons Dijon mustard
- 2 teaspoons balsamic vinegar
- 2 teaspoons maple syrup
Method
Step 1
Fry the asparagus and chop the vegetables. Assemble all of the ingredients by topping the quinoa with the veggies. Pour the dressing on top and toss to combine.
Step 2
Serve with halloumi, and enjoy.
