ingredients

  • slice of sourdough bread
  • drizzle of olive oil
  • 1/2 avocado, sliced `
  • drizzle of honey
  • squeeze of lemon juice
  • pinch of salt
  • 1/2 teaspoon chili flakes
  • 1/2 block of halloumi cheese

Method

  • Step 1

    Drizzle a slice of sourdough with olive oil on both sides and cook on a low heat in a cast iron or skillet pan until golden and crispy.

  • Step 2

    Slice the halloumi into even slices, roughly 2cm thick, and cover with boiling water for 5 minutes. Drain the halloumi and pat dry with paper towel. Drizzle with olive oil and cook on a medium - high heat for several minutes on each side or until crispy and golden.

  • Step 3

    Place sliced avocado onto the piece of fried bread.

  • Step 4

    Top with the halloumi, a drizzle of honey, squeeze of lemon juice, pinch of salt and chili flakes. If you like your toast a little extra, finish off with a drizzle of olive oil.
