Cherry Tomato Bruschetta

ingredients

  • 8 sweet cherry tomatoes
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon balsamic vinegar
  • 2 cloves garlic, finely minced
  • 3 tablespoons basil, julienned
  • salt and pepper to taste

Garlic Butter Pizza Sauce

ingredients

  • 1/8 cup salted butter
  • 1/8 cup extra virgin olive oil
  • 4 cloves garlic, minced
  • salt and pepper to taste
  • 1 tablespoon parsley, finely chopped

For the Bruschetta

Method

  • Step 1

    Quarter the cherry tomatoes and add those along with all other ingredients into a small mixing bowl. Mix until everything is evenly combined, adjust the seasoning to your liking. You can add chili flakes here too if you like a bit of spice! Let sit in fridge for at least one hour to marinate.

For the Sauce

  • Step 1

    Heat butter and olive oil in small pan over med low heat. Add in garlic and let simmer over low for 2-3 mins (be careful it doesn’t brown/burn)…add in parsley, salt and pepper to finish.

  • Step 2

    This can also be made in advance and stored in fridge. The butter will solidify, but just gently warm in microwave for 10 seconds or so to bring it back to its liquid state before using.

To Assemble

  • Step 1

    Use garlic butter as the base, along with plenty of mozzarella and Parmesan. Bake.

  • Step 2

    Add the fresh bruschetta and burrata on top once the base has come out of the oven. Drizzle burrata with garlic oil and sprinkle with flaky salt, chilli flakes, fresh ground pepper…whatever you fancy!
