Welcome to day one of our copy cat recipe series! I’m Claire, also known as @HeresYourBite, and I’m the new TikTok manager for FeedFeed. We're starting the series off with my Copycat Panera Broccoli Cheddar Soup. This one got over 4M views when I posted it this fall, and I can promise you it’s 4M views worth of deliciousness. My favorite thing about this comforting recipe is the size. It makes about 4— maybe 6 servings, so it’s perfect for one to two people with some leftovers!

- 1/4 cup butter
- 1 medium yellow onion, diced
- 6 cloves garlic, minced, to taste
- 1/4 cup all-purpose flour
- 2 cups chicken broth
- 1 large head broccoli, roughly chopped
- 1/2 cup shredded carrots
- 1 1/5 teaspoons kosher salt
- 1 1/2 teaspoons black pepper
- 1 teaspoon chicken bouillon
- 1/2 teaspoon paprika or smoked paprika
- Pinch cayenne pepper
- Pinch nutmeg
- 2 cups heavy cream
- 2 1/2 cups freshly grated sharp cheddar cheese, plus more for topping
- Toasted bread, for serving
Method
Step 1
Melt butter on a large Dutch oven over medium heat. Add onions and sautée for 5 minutes, or until softened. Add garlic and cook for another 30 seconds.
Step 2
Add flour and stir continuously for 1 minute. Slowly pour in half of the chicken broth, stir to combine, and repeat with remaining chicken broth. Stir in salt, black pepper, chicken bouillon, paprika or smoked paprika, cayenne, and nutmeg. Taste and adjust seasoning as needed.
Step 3
Add broccoli and carrots. Stir to combine and bring to a boil. Reduce heat to medium-low, cover, and cook until veggies are tender, about 10-15 minutes.
Step 4
Reduce heat to low and stir in cream. Simmer for 3-4 minutes. Add in cheese and stir until melted.
Step 5
Serve soup into bowls and top with extra cheese and serve with toasted bread. Enjoy!
