Blood Orange And Mascarpone Toast

This little refreshing brunch dish works beautifully with Sunday's sunshine. Toasted cashew & cranberry loaf, mascarpone, sliced blood orange, vanilla bean paste, honey & seeds! Good little healthy sweat treat! -@52weekscooking



2-3 slices bread of choice

1/4 cup Mascarpone

2 Blood oranges

1/2 tsp Vanilla bean paste (optional)

1 tsp Honey

1 tbsp Sunflower seeds (optional)

1 tbsp Pumpkin seeds (optional)

1 tbsp Chia seeds (optional)


Lightly toast the seeds in a dry pan. Set to one side & leave to cool.

Mix together 1 tsp of honey & 1/2 tsp of vanilla bean paste with the mascarpone.

Toast bread. 

Leave toast to cool for a minute or so, to avoid the mascarpone melting.

Whilst cooling, peel & slice blood orange removing any pith & seeds.

Generously spread the creamy mascarpone mix over your toast.

Top with sliced blood oranges, toasted seeds & chia seeds.

Finish with an extra drizzle of honey & vanilla.

Serve with hot tea, coffee or fresh juice & enjoy!
